Grilled S'Mizza (Grilled S'mores Pizza)

So I had a culinary epiphany last night that might have made me the coolest mom that ever walked the earth.

I was making Cheeseburger Stromboli (a variant to my Easy Homemade Stromboli that I was trying out), and had half a pound of raw pizza dough left over. What was I supposed to do with a half pound of raw dough? My mind got working, and I decided to whip up a dessert pizza...on the GRILL!

I knew this endeavor could be fantastically awesome or perfectly awful.

We are BIG fans of grilled pizza. I've come up with a ton of different savory creations to toss on dough and grill (check out some of my favorite grilled pizza recipes). BUT, I've never tried sweet pizza. How was I missing this my entire life?!

I had just bought a bunch of stuff to make s'mores, and I felt that would perfectly translate to a dessert pizza. So, I gathered my ingredients and the girls waited with bated breath by the grill, encouraging me to check and make sure I hadn't burned anything. 


When everything was melty and delicious, I took it off the heat, sliced it up, and waited for feedback.


Which was basically this:




Meaning, it was a total win.

I posted on the CSHM Facebook page, and a few people asked for the recipe. It's pretty simple, but I, like you, enjoy having something to work off of when I'm trying a new recipe for the first time. So here it is - enjoy!



- 1/2 lb of raw pizza dough
- 1 cup of chocolate chips (or, as a tasty alternative, Nutella!)
- 3 graham crackers, crushed
- 10 large marshmallows (or 1-2 cups of mini marshmallows).


1) Roll out dough until 1/8 inch thick.

2) Place rolled dough onto the grill and close the lid. Let grill for 1 minute. Once the bottom gets a little bit hard (don't let it get brown - just the beginning of a crispness), flip the pizza crust.


3) Spread the chocolate chips (or Nutella) over the crust evenly. Place marshmallows over the chocolate chips. Sprinkle the entire pizza with graham cracker crumbs.


4) Close lid and let cook until the bottom of the pizza is browned and the toppings are melted.


5) Take off the grill, slice and enjoy!

Beef and Caramelized Onion Grilled Pizza with Horseradish Sour Cream Sauce {Recipe}



I love to grill.

I know we've established this. But it still stands to be said again.

I grill in the rain, the snow, the hot and the cold. That's right, I don't let the wimpy "Polar Vortex" keep me from grilling my food. 

So cool, so cool.

I'm a grill fanatic.  But if there is anything I love grilling the most, it is grilled pizza.  This is evidenced on my Instagram, when I make #GrilledPizza once a week. I didn't even know you could grill pizza with raw dough until last Spring. 

It's been a weekly ordeal ever since. 

Each week, Hubby and I try to come up with new gourmet ideas, and we've had quite a few winners, like Bacon Apple Gorgonzola, Greek Grilled Pizza as well as Buffalo Chicken. There are several I haven't written up yet, which I hope to share over the next few weeks (as well as a few more that are burning in my brain that I will need to try).

Today I'll share a great grilled pizza recipe for Winter, as many of us are making various hearty beef dishes. You can use any type of leftover beef roast for this, and any recipe or marinade. If you make a pot roast for dinner or beef stew, set aside 1 cup of the cooked beef leftovers. You'll be thankful you did!  This savory pizza really hits the spot on a cold winter night, with flavors of beef, caramelized onions and horseradish.

If you need a brief visual tutorial on how to grill pizza before you give it a whirl, check out my Grilled Pizza Video Tutorial Post. And if you are not ready to attempt the art of grilling pizza, feel free to bake this in the oven.




  • 1 lb. raw Pizza Dough (or a premade pizza crust)
  • 1 cup leftover cooked Beef Roast, shredded
  • 1 cup of Caramelized Onions (if you need a tutorial: the Kitchn)
  • 1 cup of Sour Cream (I use fat free)
  • 2-4 heaping TBS of horseradish (not the sauce - a jar of grated horseradish root. This is found in the dairy section. If you like it spicy, go for closer to 3 or 4 TBS)
  • 1 cup of Shredded Mozzarella Cheese
  • 1/2 cup of Shredded Parmesan Cheese



(If baking and using a pre made crust, skip to step 3)


**Preheat Grill to medium (or, if using, oven to 350). 
Spray with grill (or, if using, cookie sheet) 
with non-stick cooking spray.**


1) Divide your dough into 2 dough balls. Set one aside to make a different pizza (you'll only need 1/2 lb dough for this recipe). Roll out until 1/8 inch thick.

2) Mix sour cream and horseradish until well incorporated.

3) Place rolled dough onto the grill and close the lid. Let grill for 1 minute. Once the bottom gets a little bit hard (don't let it get brown - just the beginning of a crispness), flip the pizza crust.

4) Spread the sour cream sauce over the top crust of the pizza. Sprinkle with mozzarella and parmesan cheeses. Top with the beef and onions. 

5) Whether baking or grilling: Let cook until bottom crust is set and all the cheese is melted. If you'd like, garnish by drizzling more hot sauce over top.

Cucumber Salad {RECIPE}


It's been a while since I've posted a recipe, and luckily I just whipped up a new one to share with you! Huzzah! Huzzah!

This recipe has a backstory. I guess if you think about it, most recipes do. They come from somewhere, right? Like, something inspired someone to throw a bunch of random ingredients together resulting in a tasty concoction, no?

The Backstory: One of my favorite local places to eat (like, of all time, people), is Three Little Pigs in West Chester, PA. It's a locally owned cafe that is open for lunch during the week. And ZOMG it has just the most charming atmosphere. One of my favorite things about 3 Pigs is that all of the sandwiches on the menu are named after streets in West Chester (I almost always order the Matlack Street, in case you are wondering). One of the other things I love is that they offer tasty homemade side dishes as opposed to chips or fries. Each day there are two completely hand-crafted sides for you to choose from. And OH, I've had the gamut. They are all so fresh, tasty and SIMPLE: Tomato Cucumber Salad, Rice and Pea Salad, Thai Peanut Pasta Salad, etc. 

Well, the other day I took Chica out on a lunch date. She asked specifically to eat "at a cafe." Her request was complete with a waving hand motion. So I obliged and we ended up at The Three Little Pigs. Their sides to choose from that day were a Rice and Pea Salad and a Cucumber Salad. I asked what was in the Cucumber Salad, and they said, "Cucumbers, onions, sour cream and dill". Sounds good, right? So I chose it. And it was SO light and tasty and refreshing, I was determined to recreate it at home.

So I did.

And now I'm sharing it with you today.

This is a simple salad that is really quite healthy even though it's creamy. You can adjust the seasoning and creaminess to your liking. And I'm sure I don't even have to say it, but I'm going to say it anyway: PERFECT SIDE FOR A SUMMER COOKOUT.

There I said it.

Now here's the recipe:





  • 4 large cucumbers, peeled and diced into 1-inch chunks (note: if you aren't a fan of seeds, get English Hothouse Cucumbers, as they are seedless)
  • 1/2 cup of red onion, sliced (if you really like the taste of onion, you can dice it. I chose to slice so I could eat around the onion without losing the flavor)
  • 1/4 cup of sour cream (I used Fat Free, but feel free to use the full-fat version. You can up the sour cream to 1/2 cup if you are looking to go really creamy)
  • 2 TBS of fresh dill, chopped
  • salt and pepper, to taste




Combine the cucumbers and onions in a large bowl. Combine with the sour cream until all of the vegetables are sufficiently covered. Sprinkle with dill and mix until it is well incorporated. Season with salt and pepper to taste.  Feel free to add more dill, salt or pepper to your liking. 

Serves 4-6

Easy, right? 

It was just a nice change from a side salad, and I plan on serving it alongside future cookouts this summer!  I never thought to use sour cream in a salad like this. Most opt for mayonnaise, and I like the sour cream's lightness better. I may try this with other vegetable combinations, like corn, black bean and  red bell peppers, perhaps?

Bacon Apple and Gorgonzola Grilled Pizza {RECIPE}



What is it about Spring that makes us want to eat healthier, fresher meals?

Warm weather, longer quantities of sunshine and the realization of the "winter coat" your body has maintained to "keep warm" through the cold months is still sticking around.

Yep.

Recently, we discovered the awesomeness that is GRILLED PIZZA. 

ZOMG, people.

It's my FAVE.

I love it because you use half the dough, which cuts a nice amount of calories. You can dress it up as healthy (or unhealthy) as you want. We aim to use low-fat cheese in sparing amounts and load up with veggies. Regardless of the toppings, there is something so fresh about it.

We started doing this on a random Wednesday, concocting the infamous Grilled Greek Pizza. We were so inspired, that we've been challenging ourselves to create a new grilled pizza each Wednesday. The next Wednesday we did a Buffalo Chicken Grilled Pizza (look for this recipe in the future!). And this past week, we put together what might be the tastiest pizza I've ever eaten in my whole life.

I'm not even joking.

Ready for this?

Bacon. Apple. Gorgonza.

On the GRILL, yo!

This pizza is a little heavier than the other pizza's we've been making. But you can lighten it up by using turkey bacon. We also couldn't find reduced-fat gorgonzola - but we would use it if we could! It is tangy and savory and just NOMNOMNOM.  

I urge you to try it immediately.
























  • 1/2 lb of pizza dough (I get the 1 lb pre made dough from the grocery store and halve it - usually found in the deli section OR you can make your own)
  • 1/2 cup of reduced fat mozzarella cheese
  • 2-3 slices of bacon, cooked and diced
  • 1 small granny smith apple, diced
  • 1/2 cup of gorgonzola cheese
  • 1/4 cup of skim milk


In small saucepan, melt the gorgonzola cheese into the skim milk on medium heat. Do not let it boil. Once it is well-combined and thick, take off heat.

Preheat grill to medium heat.

On a floured surface, roll out your pizza dough. If you find it is not elastic enough (ie: it keeps snapping back after you roll it), let it sit out for 10 minutes. Roll the dough until it is very thin, about 1/8-1/4 of an inch (as thin as you can get it before it tears). 

Spray the grill with non-stick cooking spray.  Spray the top of the dough with non-stick cooking spray (or brush lightly with olive oil). Place oiled side DOWN on the grill. Close the grill and let cook for 3-5 minutes. The dough will puff up. Keep an eye on the dough so it doesn't burn. With a spatula, check the bottom of the dough. When it is firm and golden brown, spray the top of the dough and flip over.  Let cook for another 3-5 minutes until the bottom is browned. 


While the second side is cooking, spread the gorgonzola sauce over the cooked crust. Top with mozzarella cheese. Sprinkle bacon and apples over the cheese. Close the lid to your grill for 2-3 minutes and let the cheese melt.

Once the pizza crust is finished cooking, remove from grill and put on a serving plate. Top with extra gorgonzola if you are a big fan ;)

Grilled Greek Pizza {Recipe}



We're still motivated to keep things "light" here in the casa de Anderson. I shared that we put our house on the market (yes, friends. THE REAL ESTATE MARKET ::hold me::), so planning meals has been a little more complicated than usual. It's easy to plan out my weekly meals if I know, in fact, that I will be home to make said meals (or account for grabbing meals out).  But when you could potentially have house showings at any time (please? Come see my house and love it and buy it?!), how do you account for a meal that might need an hour to bake in the oven or simmer in the slow cooker for a few hours on the counter top.

See my predicament?

Well, we recently started making a fun recipe that is not only easy AND healthy, but is quick and portable (ie: can be taken and quickly made at one of our parents houses if we need to be out of the house). Are you ready for it?

GRILLED PIZZA.

Let me say it again so it really soaks in:

Grilled.

Pizza.

Is your mind blown?

Up until I saw some pin on Pinterest, I had no idea one could throw some dough on a hot grill and voila! A pizza is born.  Well, guess what. THAT'S EXACTLY WHAT HAPPENS.

And can I tell you, it's way better than making it in the oven. The crust comes out so crispy and the grill gives the pizza a brick-oven taste.

So, Pinterest has plenty of recipes floating around, and a Greek Salad Pizza recipe caught my eye. I like dthe general idea of using only half the dough regularly used when making pizza and only a fraction of the cheese (read: healthy, people).  But I had some other ideas on how to "dress" and top it, so I kind of went rogue and whipped up my own.

Can I tell you?

BRILLIANCE.

Not that I'm one to pat my own back but...I'm totes patting my own back.

Since my recipe uses pre-marinated items, no dressing is needed.  The marinated artichoke hearts create enough of a dressing and tons of flavor.

And the taste?

Divine.

Ok, ok. Without further ado, here is the recipe.




















  • 1/2 lb of pizza dough (I get the 1 lb pre made dough from the grocery store and halve it - usually found in the deli section OR you can make your own
  • 1/2 cup of pitted kalamata olives, chopped (plain or marinated - your choice. Sometimes I just grab a container of marinated olives from the salad bar)
  • 1/2 cup of marinated artichoke hearts, chopped (you can use the jarred kind, but I made my own using this recipe -  only using 2-3 TBS of oil)
  • 1/2 cup of sun-dried tomatoes, chopped (NOT packed in oil)
  • 1/2 cup of reduced fat feta cheese, divided
  • 1/2 cup of reduced fat mozzarella cheese
  • 1-1/2 cups of arugula




In mixing bowl, combine the olives, sun-dried tomatoes, marinated artichoke hearts and 1/4 cup of feta cheese. Mix until well combined and let it marinate for 30 minutes in the refrigerator.

Preheat grill to medium heat.

Once the pizza crust is finished cooking, remove from grill and put on a serving plate. Top the crust with arugula. Top the arugula with the marinated artichoke heart mixture.  Sprinkle with remaining feta cheese.

Makes 8 servings.





Yum-tastic, no?

We're wild about grilling our pizza. Next week we are going to attempt a Buffalo Chicken Pizza. One of the best parts about grilling THIN CRUST pizza is that 1lb of dough now makes 2 pizzas. So we make a gourmet fancy-pants one for me and Hubby, and then make a regular cheese and sauce pizza for the girls.




Win-Win-Win.

Healthy Spring Meal Ideas {Motivation Monday}


Spring is in the air! I know there is still snow threatening parts of the country this month, but the weather has been spiking warmer, the days are now longer and Rita's Water Ice stores are opening across the country. WOOT!

This past weekend, our little corner of the world was warm and sunny. Coupled with the longer, lighter days (thanks Daylight Savings!), Hubby and I decided it was the perfect night to grill! Since today is supposed to be equally beautiful, we'll be grilling tonight as well.

In the winter, it can be hard to eat that healthy. Less fresh food is "in season" and it's often too cold to grill. The cold weather makes us want heavy, warm meals. Something about warm, bright weather encourages my healthy eating. I love grilling. I love fresh-from-the-Farmer's Market produce. I love the feeling of a light but filling meal.  

So for this Motivation Monday, I thought I'd round up my favorite healthy meals for Spring (and Summer)!  Some are grill meals, some are just fresh and light. Here are a few of my favorite meals to eat in Spring:

These are, hands down, some of my favorite recipes for warm weather! They are filling yet light, with enough room for a (healthy) dessert! (Think grilled pineapple with a dollop of whipped cream. YUM!)

Recipe: Pesto Marinated Flank Steak

It is GRILL season, people.  And since securing a gas grill for the first time in our marriage, we have been grilling on a regular basis.  When you don't have to buy a bag o' charcoal, work your butt off to get it to light, wait for it to heat to a reasonable temperature and then throwing the meat on, grilling becomes immensely easier.

We love grilling everything. And I have some great grill marinades and rubs that we've fallen in love with over the years (just check out the recipe index).  This past Saturday, I was about to make up my usual Grill Marinade for the flank steak that I'd defrosted, but inspiration struck, and I tried something completely different.

And it was fabulouso.

Simple Supper Monday, Vol. 68: Chimchurri Fajitas

Ok. So, here's what's going to happen:


1) You are going to read this post.
2) You are going to begin to salivate and twitch.
3) You will be unable to contain yourself from running to the grocery store and buying the ingredients so you can immediately make this meal.


Yes. It's that good.


The other day, Hubby was listening to his fave radio station, NPR.  On one particular show, a cookbook author was on promoting her new book and sharing her recipes. Tara Desmond compiled the book, Almost Meatlessand in it, she shares the recipe I am about to share with you below. Hubby said that when they were talking about the book (and the recipe) it sounded great (in that we will probably be going to buy the book tomorrow). The fact that it was high on veggies, low on meat and overall much more healthy was a super added bonus.


I was inspired by his excitement, and put it on the menu plan for this week.  I held off posting my Simple Supper recipe earlier today, because I wanted to try this recipe out first before sharing it with you.


OH. MAH. GAH.


It was amazing.  Like so amazing.  We couldn't get over the...amazingness.  And it felt so good that it was healthy.  This is a keeper for sure, and we plan on making it again very soon.


And so shall you.

Simple Supper Monday

Chimichurri Fajitas
serves 6-8
(from Tara Desmond's book, Almost Meatless)


Chimicurri sauce

For the Chimichurri

  • 4 cups loosely packed fresh parsley leaves
  • 2 cups loosely packed fresh cilantro leaves
  • 1 medium jalapeño, seeded and coarsely chopped
  • 3 cloves garlic
  • ½ teaspoon toasted cumin seeds
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons freshly squeezed lime juice (about 2 limes)
  • 2 tablespoons red wine vinegar
  • ½ cup olive oil
For the Fajitas
  • 1 medium green zucchini (about 1 pound), sliced ¼ inch thick lengthwise
  • 1 medium yellow zucchini (about 1 pound), sliced ¼ inch thick lengthwise
  • Salt and pepper
  • 1 medium red onion, sliced into ¼-inch-thick rings
  • 1 flank steak or skirt steak (about 1½ pounds)
  • 12 or more 6-inch flour or corn tortillas
  • 1 cup sour cream (optional)
  • 1 cup grated cheddar cheese (optional)

Directions

    1. To make the Chimichurri: Combine the parsley, cilantro, jalapeño, garlic, cumin seeds, salt, pepper, lime juice, and vinegar in the bowl of a food processor. Pulse three or four times, forming a coarse paste. With the processor running, add the oil through the food chute in a steady stream, forming a textured sauce. Taste for seasoning and adjust as needed. Reserve ¼ cup of the sauce for the marinade, and transfer the rest to a small serving bowl and set aside.
    2. To make the fajitas fixings, lightly brush the zucchini strips with half of the reserved chimichurri, sprinkle with salt and pepper, and place in a zippered storage bag along with the onion.
    3. Season the steak with pepper and rub the remaining chimichurri on both sides. Let the zucchini and the steak sit at room temperature for 30 minutes.
    4. Preheat the grill to medium-high.
    5. Season the steak with salt and grill for 6 to 8 minutes per side for medium-rare. At the same time, grill the zucchini slices and onion rings for about 3 minutes per side, until grill marks appear and the vegetables are just tender. Transfer the grilled zucchini and onions to a plate, stacking them so the heat continues to cook them a bit. Grill the tortillas for about 30 seconds per side, until warm and slightly blackened. Wrap in foil to keep warm.
    6. Remove the steak from the grill and let it sit for about 10 minutes. Slice the meat very thin, across the grain.
    7. To assemble the fajitas, pile 2 strips of steak and several pieces of zucchini and onion on each grilled tortilla. Drizzle with chimichurri sauce and roll it up, or leave the assembly to the crowd. Serve with sour cream and cheese if you like.

Notes:

1) Along with the veggies noted in the recipe, we also grilled up a red pepper and a yellow pepper.


2) We did not have fresh oregano, and for the life of me, I could not find it at my grocery store. They had, like, every other fresh herb known to Man. I digress.  We substituted 1 1/2 teaspoons of dried/crushed oregano for the 1/4 cup of fresh oregano.

3) We already had a VERY good Chimichurri recipe, so we used that instead of the one printed above.  The recipe we have was given to us by our good friend, Diane. It is a Cat Cora recipe. And we've decided you could eat it on just about anything.  If you are interested in trying Our/Diane/Cat's Chimichurri recipe:


Chimichurri Recipe #2

For about 3 lbs meat (Chicken, Pork or Steak) ~

Place into a food processor or blender:

·         1/3 cup sherry vinegar

·         6 cloves garlic, roughly chopped

·         4 dried bay leaves

·         2 poblanos, stemmed and roughly chopped*

·         2 serranos, stemmed and roughly chopped*

Pulse until smooth.

Add:

·         1 cup packed fresh flat leaf/ AKA Italian parsley leaves

·         1 cup packed fresh basil leaves

·         ¼ cup packed fresh oregano leaves

Pulse until you have a coarse paste.

With the motor running, slowly pour in ¾ olive oil. You’ll know when it’s done—but it comes together fast.

Transfer to a bowl; add 1 ¼ tsp salt and stir.

*The seeds, of course, should be kept per your taste for heat;  the serranos are very hot (if you don’t know them).
