Bill's Raspberry Chicken {RECIPE}

Today I post one of Bill's favorites.

I didn't know anything like this existed, as it never graced the dinner table of my childhood. Bill, on the other hand, grew up on this tasty dish. He requested it as his birthday dinner. It was the first meal he cooked for me when we were dating. After he cooked it, I asked his mom for the recipe, which she graciously passed along. I believe this recipe goes back to Bill's grandmother - but I'll have to verify that.

It's pretty simple and very tasty. This dish can easily be served on a busy week night or dressed up for a more formal get together. If you try it, let me know how it worked out for you!


Simple Supper Mondays


Bill’s Raspberry Chicken

  • 2-3 lbs of boneless, skinless chicken breasts
  • ¼ cup finely chopped onion
  • 3 TBSP of Raspberry Jelly
  • 3 TBSP of red wine vinegar
  • ¼ cup of whipping cream (not WHIPPED cream)

1) Lightly salt chicken. Cook chicken in a skillet on stove over medium heat, 5 minutes on each side.

2) Add onion. Cook until chicken is tender.

3) Remove chicken, add jelly and vinegar. Cook and stir 1 minute. Add whipping cream.

4) Heat and pour over chicken.

Notes:

1) The Anderson's serve this chicken over egg noodles, which I highly recommend. If you find another way to serve it, please pass it along!

2) I noted in the ingredients list that "whippING cream" is not the same as "whippED cream." I think the idea is that you can MAKE whipped cream from whipping cream. But, I digress. For those who don't know, you can find whipping cream with the milk/creamer/half and half at the grocery store. It usually comes in a little milk carton (the kind you might get in Elementary School). Sorry if it seem that I am taking your intelligence for granted, but when I first got this recipe, I had no idea that whippING cream existed. It took me a bit at the grocery store to find it. Just trying to save you some time and energy!

  1. I can't wait to try this... Andy and I had a raspberry chicken dish years and years ago somewhere in Chaddsford. We've always tried to find it or recreate the dish -- this recipe might just be it!! :-) L
