So, while I am excited to be on the Meatless Meal adventure, my goal is not to reinvent the wheel.
In my opinion, wheels seem to work just fine as they are.
What I mean to say is, you won't find an awesome new original Meatless Meal recipe here each week. It is my intention to post one Meatless Meal per week, don't get me wrong. On this journey, though, I have found that whether they intend to or not, most people already have Meatless recipes in their repertoire. They just don't know it or use it as so.
Some weeks, you will be graced with an original recipe, should I become courageous. Most weeks, I will be passing along the great recipes I stumble upon (or those that are sent to me, AHEM). And for the weeks in between, I want to link back to those recipes that have previosly been posted, but can now be welcomed into the collaborative works of Meatless Meal recipes.
For starters, check yesterday's post: Steph's Linguine with Tomatoes, Garlic and Basil. That was an unintentional Two-For-One deal.
But if you are really racking your brain for a filling and delicious Meatless Meal, head back to my recipe for Quiche. I've been making this once a week, eating the leftovers for lunch. The "filling" I use is a mix of chopped onion, chopped broccoli and chopped asparagus. LOVE. IT.
So check back weekly for Meatless inspirations. They may be brand spankin' new, passed along or reposted. Either way, you can rest assured they will be GOOD. And keep me updated on YOUR Meatless Meal journey (and for heaven's sake - SEND ME YOUR RECIPES!)
