Simple Supper Monday - Volume 41: Chicken Potato Casserole

I came across this recipe in my quest for "freezable meals." Disclaimer: I have NOT tried it yet, but I intend on making it this week. I will let you know how it goes. I am particularly excited to attempt this recipe because I've had a bag of frozen hash browns in my freezer for...well...too long. And this recipe calls for...you guessed it! Frozen hash browns! I'll post the recipe below, and write up a review once I make it!

Simple Supper Monday

  • 10 oz. can condensed reduced fat and sodium cream of chicken soup
  • 1 cup sour cream
  • 1/4 cup milk
  • 2 cups cubed cooked chicken
  • 1-1/4 cups shredded Cheddar cheese
  • 3-1/2 cups frozen hash brown potatoes, thawed
  • 1-1/2 cups frozen peppers and onions, thawed
  • 1-1/4 cups shredded Cheddar cheese
  • 1-1/2 cups crushed potato chips

Preparation:

Preheat oven to 350 degrees. In a medium bowl, combine soup, sour cream, milk, chicken and 1-1/4 cups cheese. Spread three-quarters of this mixture in a greased 2-quart baking dish.
Sprinkle hash browns and peppers and onions over the top of the casserole and press down lightly, then top vegetables with remaining soup mixture. Sprinkle with remaining cheese and potato chips.
Bake casserole, uncovered, at 350 degrees for 50-60 minutes or until bubbly. Let stand for 5-10 minutes before serving. 8 servings
To freeze, assemble casserole as directed, except do not thaw potatoes, peppers, or onions and do not sprinkle with potato chips. Wrap casserole in freezer wrap or heavy duty foil and freeze. Reserve potato chips in pantry. To thaw and bake, let thaw overnight in refrigerator. Uncover and bake at 350 degrees F for 60-70 minutes until bubbly. Then top with crushed potato chips and bake 5-10 minutes longer.

  1. So I saw this post on Monday and thought, "YUM!". Then, what did I do? Went to the grocery store to get all the ingredients. I finally was able to make it! I took advantage of having the casserole done the night before since I was having chicken. I grilled the extra chicken needed for this meal. It is a really easy meal to throw together, just measure and mix it all up! It sat in the fridge overnight. Then when it was time, it came out while the oven was warming up. Followed the directions, and BAM! It was yummy! If you like hashbrowns or scalloped potatoes, this meal is for you. Cheesy, creamy, chicken goodness! One that I will be making again...after we eat the leftovers that is. Thanks for a great recipe idea! :)

  2. Beth - I'm glad you enjoyed it! Each ingredient looked so perfect - I couldn't resist! I made it the other night, though, and used fresh onions. And somehow, it was SO oniony - I couldn't enjoy it :( I want to try it again, using either the frozen onions they recommend or sauteing the onions before using them. It was WAY too much of the raw onion taste. But I dont' want to give up hope it can be good - so I WILL attempt it again. I'm glad it worked for you!!!
